FoodTrex 2020, a major food festival held in collaboration with the World Food Travel Association, broke its attendance record for the second year in a row, drawing 11% more people than it did in 2019. The fair has noted that travelers are no longer content with eating just any food. They demand an authentic eno-gastronomic experience. Moreover, Gastro-Tourism is an ally to the kind of sustainability that protects local culture which, in turn, nurtures gastronomical elements that could be wiped out of existence. If we continue to promote sustainability, then “poco a poco” (bit by bit), we can save the precious fungi!
