El Brote is a restaurant opened by three very enthusiastic young men on the calle Ruda, 11: Eduardo Antón and Alvaro de la Torre, with Pablo Roncal producing his amazing gastronomic creations in the kitchen.
The daily hand-written menu focuses on all kinds of mushrooms and other natural produce, of which Eduardo is the recognized expert.
To survive the pandemic, they had to dismiss their employees and tend to the restaurant by themselves, but according to Eduardo: “That was not a major problem, because we are partners and if we have to work harder and earn less, we will do this until the nightmare is over.”

It is not a vegetarian restaurant as such, and meat and chicken are included in the dishes, accompanied by a vast variety of very fresh mushrooms and other vegetables.
Eduardo explains their philosophy: “The most important thing to us is to provide a synergy between the best products and a unique cuisine that respects the profound essence of each ingredient. We have been doing this for over ten years now and we are deeply involved in every step of the process: the selection, gathering and harvesting of our natural products in the country whenever possible and also the purchase of the best quality products, for a continuously changing and provocative cuisine.”
In fact, they do not have a set menu as Alvaro explains: “It depends on the whims of Mother Nature and what we find available, optimal and appetizing.”
Highly recommended are the “champiñones de muerte” and mushroom carpaccio, and for dessert, the black truffle ice cream.
El Brote is only open from Wednesday to Sunday according to the schedule given below. It is closed on Monday and Tuesday when the owners go “mushroom hunting”. Because of the very limited space, especially now, it is a good idea to reserve.
